Method
- Toast the sesame dry, in a wide pan with no oil, over a medium heat. Stir constantly — sesame goes from golden to burnt in under a minute.
- Take the pan off the heat, add the lokum cut into pieces and stir until it softens and binds the sesame seeds together.
- Keep stirring until the mixture has cooled enough to handle.
- Press the mixture out on a sheet of baking parchment into a slab about a centimetre thick.
- Along one edge lay a line of finely chopped jelly sweets and roll the whole thing up into a log, using the parchment to help you.
- Leave the log somewhere cold to set for at least two hours, then cut into slices.

- Lokum
- Plain Turkish delight cut into cubes, or marshmallow melted over a low heat.
- Jelly sweets
- Dried apricots or cherries, finely chopped. If you are making this for a fasting day, choose gelatine-free jelly sweets — many contain it.
- Sesame seeds
- Ground hazelnuts or hulled sunflower seeds, toasted dry the same way.
