Method
- In a bowl mix the chopped salami, grated cheese, mushrooms and oregano. That is the whole filling — make it in advance so you can work quickly, because the pastry sheets dry out while they sit uncovered.
- Divide the pastry into two equal halves; each half makes one roll.
- Take a sheet, spread it with a thin layer of ketchup and scatter a small amount of the mixture over it. Do not overload it — an overfilled sheet tears as you roll.
- Stack the sheets on top of one another the same way, then roll the whole stack up into a log, firmly but not stretched tight.
- Brush the top of the roll with a very thin layer of ketchup and scatter over sesame seeds. Repeat with the second half of the pastry.
- Bake in a well-heated oven at 200 °C for about 25–30 minutes, until browned and the sesame smells toasted.
- Let them stand for five minutes, then cut into thick rounds — cut straight from the oven they fall apart.
