Method
- Crumble both cubes of yeast into a pot, add 3 teaspoons sugar, 2 teaspoons salt and a little of the lukewarm milk to dissolve them. Then add 8 tablespoons of flour and the rest of the warm milk.
- Cover with a lid and a cloth or blanket and leave to rise until the dough puffs up.
- When it has risen, add the three beaten eggs, 3 small cups of oil and as much flour as it takes for a soft dough. Leave it to rise again.
- After the second rise, knock it back and divide into 2 equal halves, then each half into 6 — giving 12 balls. Leave them covered to rise until the surface dries.
- Roll each ball into a round the size of a plate. Cut it first into quarters, then each quarter into 3 — twelve triangles in all.
- Put crumbled white cheese mixed with egg on each triangle and roll from the wide end towards the point. The point must end up underneath, against the tray, or the rolls open in the oven.
- Arrange them on a tray, brush with two beaten yolks and scatter sesame or caraway over them if you like.
- Shave small flakes off the margarine with a knife and put one on each roll. If you have two trays, divide the margarine between them so it goes round.
- Bake in a heated oven at 200 °C until well browned, about 25–30 minutes. Once cool, they freeze well in a well-sealed box.
