Method
- Cut the crust from every slice with a knife so only the middle is left. The slices should be even or the cake will not stand straight.
- Spread each slice with margarine. That thin layer of margarine is what stops the bread drinking the moisture from the filling and collapsing.
- Lay lettuce leaves on the serving plate as decoration.
- Lay the first course of buttered slices, packed tightly with no gaps.
- Mix the ham, peas, tuna and cream cheese into an even filling and spread a thick layer over the bread.
- Lay a second course of bread and repeat. Then ice the whole cake with mayonnaise, as you would ice a cake.
- Decorate to taste with rounds of boiled egg, gherkins, olives and tomato. Chill for at least three hours — the cake must set before it is cut.
- Serve cold, as a starter, sliced like a real cake.
